Lamb, Bacon wrapped Asparagus, Apple Onion Potato Pancakes

We were fortunate enough to have our friends David and Lisa come by for dinner last night. I wanted to make a nice meal in thanks for their invite to hear them speak about their Mediterranean sailing adventures at the Eastport Yacht Club last weekend. They are in the middle of writing an updated cruising guide to the Black Sea and are of only a handful of sailors to venture there.  They have chronicled most of their travels at their at gyatso.net.

Here’s what I made:

Lamb: Add Salt, Pepper and other spices (I used oregano but rosemary is traditional) to taste and drizzle with olive oil. Sear in hot pan to add color for 1.5 – 2 minutes a side then finish (I like it med rare so about 15 min) in 350degree oven.

Asparagus wrapped in Bacon: Snap off bottoms of asparagus (where they break by hand is the right place to break them) and wash them off. Wrap a few together (less if they are large) with bacon. Lightly salt and pepper them. Bake for 15 min at 350 degrees.

Potato Pancakes with Apple and Onion: Make a packet of instant mash taters. Add salt and pepper to taste then cool in the fridge. Cut up some apple, onion and garlic and cook with a bit of olive oil. Once the apple starts to soften a bit add just a little bit of sherry and cook for a minute or two more. Remove from heat and cool in fridge. Combine cooled potato, apple, onion, garlic, and 1 egg in bowl. Hand make patties and coat in flour. Drop patties in hot butter and cook until golden brown.*

* I didnt have eggs because I used the ones I had to make a Key Lime Pie and left the ones I bought at the grocery store. I also realized I didnt have any flour so I just made it without those. Unfortunately right after this picture when I tried to flip them they fell apart as I kinda of expected. This worked out ok though because it was still wonderful.
