Almond Cookie Cutout Sandwiches

Ingredients
- 2.5 cups flour
- 0.5 tsp salt
- 0.75 cup butter, softened
- 1 cup powdered sugar
- 1 egg
- 1 tsp almond extract
- Apricot jam or other filling
Directions
- Preheat oven to 350 F.
- In a medium bowl mix together flour and salt, set aside.
- Using a stand mixer with whisk attachment, cream butter and sugar till light and fluffy
- Add egg and almond extract.
- Slowly mix in flour till dough forms.
- Cover and refrigerate for 30 minutes or up to an hour.
- Let dough sit out for a bit to soften. When ready shape into 1.5-2 tablespoon sized balls and place on baking sheet.
- Emboss with a cookie stamp and remove excess dough
- Bake for 8-10 minutes and cool cookies on cooling rack.
- Once cookies are completely cool create sandwiches by filling with the filling of your choice.
