Almond Cookie Cutout Sandwiches

Ingredients

  • 2.5 cups flour
  • 0.5 tsp salt
  • 0.75 cup butter, softened
  • 1 cup powdered sugar
  • 1 egg
  • 1 tsp almond extract
  • Apricot jam or other filling

Directions

  1. Preheat oven to 350 F.
  2. In a medium bowl mix together flour and salt, set aside.
  3. Using a stand mixer with whisk attachment, cream butter and sugar till light and fluffy
  4. Add egg and almond extract.
  5. Slowly mix in flour till dough forms.
  6. Cover and refrigerate for 30 minutes or up to an hour.
  7. Let dough sit out for a bit to soften. When ready shape into 1.5-2 tablespoon sized balls and place on baking sheet.
  8. Emboss with a cookie stamp and remove excess dough
  9. Bake for 8-10 minutes and cool cookies on cooling rack.
  10. Once cookies are completely cool create sandwiches by filling with the filling of your choice.
