Pumpkin Pie Squares

Ingredients

Crust

  • 1 c flour
  • 0.5 c quick oats
  • 0.5 c brown sugar
  • 0.5 c butter

Filling

  • 2 15 oz cans pumpkin
  • 2 12 oz cans evaporated milk
  • 4 eggs
  • 1.5 c sugar
  • 2 t cinnamon
  • 0.5 t cloves
  • 1 t salt

Topping

  • 0.5 c brown sugar
  • 0.5 c chopped nuts (walnuts, pecans, etc.)
  • 2 T butter

Directions

  1. Combine the Crust ingredients until crumbly. Press into a greased 9x13 baking dish.
  2. Bake at 350 deg for 20 min until golden.
  3. Mix filling ingredients until smooth and pour over crust. Bake 45 minutes.
  4. Combine topping ingredients and sprinkle over the top
  5. Bake 15 - 20 minutes until a knife tests clean.
  6. Cool and store in refrigerator.
