Roll-Out Cookies
- 4.5 dozen cookies
- 15 minutes
- 8-10 minutes
Ingredients
- 1 cup unsalted butter
- 1.5 cups granulated sugar
- 1 egg
- 1.5 t vanilla extract
- 0.5 t almond extract
- 2.25 cups flour
- 1 teaspoon baking powder
- 1 teaspoon salt
Directions
- Pre heat oven to 350 F.
- Cream the butter and the sugar.
- Beat in egg and extracts.
- In a separate bowl, combine flour, baking powder and salt.
- Add to butter mixture 1 cup at a time, mixing after each addition.
- Do not chill dough!
- Divide dough into 2 balls.
- On a floured surface, roll each ball out into a 12-inch wide, 1/8 inch thick circle.
- Dip cookie cutter in flour before each use and cut out the cookies
- Bake on an ungreased cookie sheet in 350 F oven for 8-10 minutes or until lightly brown
- Place cookies on a cooling rack to cool and store in an air-tight container.
