Roll-Out Cookies

  • 4.5 dozen cookies
  • 15 minutes
  • 8-10 minutes

Ingredients

  • 1 cup unsalted butter
  • 1.5 cups granulated sugar
  • 1 egg
  • 1.5 t vanilla extract
  • 0.5 t almond extract
  • 2.25 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt

Directions

  1. Pre heat oven to 350 F.
  2. Cream the butter and the sugar.
  3. Beat in egg and extracts.
  4. In a separate bowl, combine flour, baking powder and salt.
  5. Add to butter mixture 1 cup at a time, mixing after each addition.
  6. Do not chill dough!
  7. Divide dough into 2 balls.
  8. On a floured surface, roll each ball out into a 12-inch wide, 1/8 inch thick circle.
  9. Dip cookie cutter in flour before each use and cut out the cookies
  10. Bake on an ungreased cookie sheet in 350 F oven for 8-10 minutes or until lightly brown
  11. Place cookies on a cooling rack to cool and store in an air-tight container.
