Biscuit Cookies

Ingredients

  • 2 eggs, whites and yolks separated
  • 1 t baking soda
  • 2 c sour cream
  • 2 c sugar
  • 0.5 c butter, room temp
  • 1 t salt
  • 2 t vanilla extract
  • 2 t baking powder
  • 5 c all-purpose flour, plus more for flouring work surface

Directions

  1. Preheat oven to 375 F. Line 2 baking sheets with parchment paper.
  2. In small bowl, beat egg whites; set aside
  3. In small bowl, mix baking soda and sour cream; set aside
  4. In large bowl, cream sugar and butter. Mix in egg yolks, sour cream mixture, salt, egg whites, and vanilla. Sift in baking powder and 2 c flour, and mix.
  5. Continue mixing, adding small amounts of sifted flour at a time. You may not need all of it, the mixture may be too stiff for mixer, so mix by hand.
  6. Roll out dough on floured surface, cut out circles and place on baking sheets. Bake 12-15 minutes.
  7. Serve, storing leftovers in an airtight container.
