Biscuit Cookies

Ingredients
- 2 eggs, whites and yolks separated
- 1 t baking soda
- 2 c sour cream
- 2 c sugar
- 0.5 c butter, room temp
- 1 t salt
- 2 t vanilla extract
- 2 t baking powder
- 5 c all-purpose flour, plus more for flouring work surface
Directions
- Preheat oven to 375 F. Line 2 baking sheets with parchment paper.
- In small bowl, beat egg whites; set aside
- In small bowl, mix baking soda and sour cream; set aside
- In large bowl, cream sugar and butter. Mix in egg yolks, sour cream mixture, salt, egg whites, and vanilla. Sift in baking powder and 2 c flour, and mix.
- Continue mixing, adding small amounts of sifted flour at a time. You may not need all of it, the mixture may be too stiff for mixer, so mix by hand.
- Roll out dough on floured surface, cut out circles and place on baking sheets. Bake 12-15 minutes.
- Serve, storing leftovers in an airtight container.
