Apple Dumpling Cake

Ingredients

  • 3 lbs. apples (peeled, cored and sliced) (tart apples work well)
  • 2 c. all-purpose flour
  • 1.5 c white sugar
  • 2 t baking powder
  • 1 t salt
  • 2 eggs, beaten
  • 1 c vegetable oil
  • 1 t ground cinnamon
  • 1 t vanilla extract

Directions

  • Preheat oven to 350 F. Lightly grease a 9x13 in^2 baking dish.
  • Place apples in baking dish. In a medium bowl, mix together flour, sugar, baking powder and salt. Stir in eggs and oil; pack on top of apples
  • Bake in preheated oven for 40-45 min., or until topping is puffed and golden brown
