Apple Dumpling Cake

Ingredients
- 3 lbs. apples (peeled, cored and sliced) (tart apples work well)
- 2 c. all-purpose flour
- 1.5 c white sugar
- 2 t baking powder
- 1 t salt
- 2 eggs, beaten
- 1 c vegetable oil
- 1 t ground cinnamon
- 1 t vanilla extract
Directions
- Preheat oven to 350 F. Lightly grease a 9x13 in^2 baking dish.
- Place apples in baking dish. In a medium bowl, mix together flour, sugar, baking powder and salt. Stir in eggs and oil; pack on top of apples
- Bake in preheated oven for 40-45 min., or until topping is puffed and golden brown
