Pistachio Ambrosia or Green Goop

My Aunt E gave this one to me. She’s a whiz when it comes to any kind of Jello based dessert.

Ingredients

  • 1 sm. box instant pistachio pudding
  • 1 16 oz. can pineapple chunks
  • 1 8 oz. can crushed pineapple
  • 1 c. shredded coconut
  • 1 c. chopped nuts
  • 12 or 16 oz. bowl Cool-Whip
  • 1 c. mini marshmallows

Directions

  1. Mix both cans of pineapple in a large bowl
  2. Sprinkle pudding mix over pineapple and let sit for a few minutes
  3. Blend in coconut, nuts, and marshmallows.
  4. Fold in Cool-Whip and refrigerate for at least 2 hours.
