Torta di Mele

It’s an Italian cake that I got my good friend Lucia. She used to bring it to the office when we were students together.

Ingredients

  • 500 g flour
  • 500 g butter
  • 1 lemon, zested and juiced
  • 4-5 apples, peeled
  • 1 shot Brandy
  • ~10-11 g Baking Powder
  • 2 T Blueberry Jam
  • 2 t ground cinnamon
  • 1 t slivered almonds
  • 1 t powdered sugar
  • 2 eggs

Directions

  1. Sift 400 g flour with baking powder, 200 g sugar and make volcano shape. Put 400 g butter (room temp and cut into pieces), eggs, lemon zest, and brandy in the middle. Mix Quickly!
  2. Peel Apples, cut into wedges and cover in lemon juice.
  3. Prepare cake pan with butter and flour, put the mix in and press down with your hand or wet spoon.
  4. Add apple wedges, starting from outer edge, in concentric circles.
  5. Mix the remaining flour and sugar with cinnamon, and make a volcano shape. Put the remaining butter in the middle. Cut the butter into the mixture. Put half of that onto the apples.
  6. Put the almonds on top of that, snd cover w/ the rest of the crumbles
  7. Bake in a preheated 320 F oven for ~50 min.
  8. when finished, top with powdered sugar.
