Veal Chops Parmesan

Ingredients
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1 dash pepper
- 4 veal loin chops, about 3/4-inch thick
- 1/2 cup fine dry bread crumbs
- 1/4 cup grated Parmesan cheese
- 1 large egg, beaten
- 2 tablespoons olive oil
- 4 slices of Mozzarella cheese
- 1 green bell pepper, cut in strips
- 1 medium onion, sliced
- 1 can (8 ounces) tomato sauce
- 1/2 teaspoon dry leaf oregano, crumbled
- 1/2 teaspoon dry leaf basil, crumbled
Directions
- Combine flour and seasonings; coat veal chops.
- Mix crumbs with Parmesan cheese.
- Dip chops in beaten egg then in the crumb mixture.
- Brown over medium-low heat in a large skillet in hot olive oil.
- Add sliced onions and green bell pepper the last 5 minutes of browning.
- Pile sliced vegetables over the veal chops.
- Place a slice of Mozzarella cheese over each chop.
- Pour tomato sauce over chops and sprinkle with oregano and basil.
- Reduce heat, cover and simmer for 45 minutes, or until meat is tender.
