Spicy Vermicelli with Beef

Ingredients

  • 1 8.8 oz bag Vermicelli Rice Noodles
  • 3 T lime juice
  • 1 T dark brown sugar
  • 1/4 c oil
  • 1 T & 2 t red curry paste
  • 1 T & 2 t minced garlic
  • 1 t ground turmeric
  • 1 lb ground beef or pork
  • 2 T fish sauce
  • 1 12oz package cherry tomatoes cut in half
  • 1 bunch scallions or green onions chopped
  • (optional) chopped cilantro and peanuts

Directions

  1. Soak noodles in hot tap water for 1 min. Cut in half with kitchen shears. Continue soaking till ready to stir-fry.
  2. Combine lime juice and sugar, set aside.
  3. Heat oil in a large skillet over medium-high heat. Add garlic and cook until soft.
  4. Add curry paste and turmeric. Stir-fry 1-2 minutes or until dissolved.
  5. Add beef or pork and fish sauce. Stir-fry until no longer pink.
  6. Add tomatoes, scallions (or green onions), and lime juice mixture. Combine and cook 1 minute.
  7. Drain vermicelli and add to skillet. Stir-fry until vermicelli is coated and ingredients are combined.
  8. Garnish with cilantro and peanuts.
