Eat for a Week Chili

Feel free to toss in some good chili mixes to spice things up!

Ingredients
- 2 T olive oil
- 2 medium onions, diced
- 2 cloves garlic, minced
- 1 green pepper, seeded and diced
- 1 red pepper, seeded and diced
- 2 medium carrots peeled and diced
- 2 lb ground beef 80:20 or 90:10.
- 2 T chili powder
- 2 t cumin
- 1 28 oz can diced tomatoes
- 2 15 oz cans kidney beans, drained and rinsed
- 2 15 oz cans pinto beans, drained and rinsed
Directions
- Heat olive oil on medium in a large pot
- Add onions, green and red peppers cook until softened.
- Add garlic and cook a bit longer.
- Add beef and brown it.
- Stir in all the remaining ingredients except beans.
- Bring to a boil, and simmer for 45 min till reduced.
- Add beans, cook till thickened (15 min or so).
- Season w/ salt and pepper to taste.
