Eat for a Week Chili

Feel free to toss in some good chili mixes to spice things up!

Ingredients

  • 2 T olive oil
  • 2 medium onions, diced
  • 2 cloves garlic, minced
  • 1 green pepper, seeded and diced
  • 1 red pepper, seeded and diced
  • 2 medium carrots peeled and diced
  • 2 lb ground beef 80:20 or 90:10.
  • 2 T chili powder
  • 2 t cumin
  • 1 28 oz can diced tomatoes
  • 2 15 oz cans kidney beans, drained and rinsed
  • 2 15 oz cans pinto beans, drained and rinsed

Directions

  1. Heat olive oil on medium in a large pot
  2. Add onions, green and red peppers cook until softened.
  3. Add garlic and cook a bit longer.
  4. Add beef and brown it.
  5. Stir in all the remaining ingredients except beans.
  6. Bring to a boil, and simmer for 45 min till reduced.
  7. Add beans, cook till thickened (15 min or so).
  8. Season w/ salt and pepper to taste.
