Eel Sauce

Be careful that you don’t boil the sauce for too long. There’s a lot of sugar in the sauce, and you might end up making eel carmel instead. Got this from my friend DJ.

Ingredients

  • 1/4 c mirin
  • 1.5 T sake
  • 2.5 T sugar
  • 1/4 c soy sauce

Directions

  1. Mix first three ingredients in a sauce pan and heat until the sugar is melted.
  2. Add soy sauce and bring to a boil
  3. Reduce until the desired thickness is reached.
