Eel Sauce
Be careful that you don’t boil the sauce for too long. There’s a lot of sugar in the sauce, and you might end up making eel carmel instead. Got this from my friend DJ.

Ingredients
- 1/4 c mirin
- 1.5 T sake
- 2.5 T sugar
- 1/4 c soy sauce
Directions
- Mix first three ingredients in a sauce pan and heat until the sugar is melted.
- Add soy sauce and bring to a boil
- Reduce until the desired thickness is reached.
