Good to the Core Apple Chutney

Ingredients
- 5 Granny Smith or Newton Pippin apples, cored, peeled, and chopped
- 2.5 c sugar
- 1.25 c red wine vinegar
- 0.5 c each dried apricots, peaches, pears chopped
- 0.33 c golden raisins
- 6 garlic cloves, minced
- 1 T grated, fresh ginger
- 2 t salt
- 0.75 t cayenne
Directions
- In a large sauce pan, over medium heat, combine all the ingredients.
- Bring to a boil and reduce heat
- Simmer 35 - 40 min, stirring often
- Cool to room temperature.
- Spoon into canning jars and refrigerate 2 weeks before use.
