Good to the Core Apple Chutney

Ingredients

  • 5 Granny Smith or Newton Pippin apples, cored, peeled, and chopped
  • 2.5 c sugar
  • 1.25 c red wine vinegar
  • 0.5 c each dried apricots, peaches, pears chopped
  • 0.33 c golden raisins
  • 6 garlic cloves, minced
  • 1 T grated, fresh ginger
  • 2 t salt
  • 0.75 t cayenne

Directions

  1. In a large sauce pan, over medium heat, combine all the ingredients.
  2. Bring to a boil and reduce heat
  3. Simmer 35 - 40 min, stirring often
  4. Cool to room temperature.
  5. Spoon into canning jars and refrigerate 2 weeks before use.
