Slow Baked Tennessee Tomatoes

Ingredients

  • 6 large ripe tomatoes, cut in half horizontally
  • 6 t olive oil
  • Salt and pepper, to taste
  • 3 garlic cloves, minced
  • 3 T chopped, fresh basil
  • Goat cheese, crumbled

Directions

  1. Preheat oven to 325 F
  2. Place tomatoes on baking sheet, cut side up.
  3. Drizzle with oil, sprinkle with salt and pepper
  4. Bake 1 - 1.5 hours and sprinkle with garlic
  5. Bake 1 - 1.5 hours more. They are done when they collapse and start to carmelize.
  6. Sprinkle with cheese in the last 5 min.
  7. Sprinkle with basil just before serving
