Slow Baked Tennessee Tomatoes

Ingredients
- 6 large ripe tomatoes, cut in half horizontally
- 6 t olive oil
- Salt and pepper, to taste
- 3 garlic cloves, minced
- 3 T chopped, fresh basil
- Goat cheese, crumbled
Directions
- Preheat oven to 325 F
- Place tomatoes on baking sheet, cut side up.
- Drizzle with oil, sprinkle with salt and pepper
- Bake 1 - 1.5 hours and sprinkle with garlic
- Bake 1 - 1.5 hours more. They are done when they collapse and start to carmelize.
- Sprinkle with cheese in the last 5 min.
- Sprinkle with basil just before serving
