Stosh's Stolen Peppers

A Stanley P. original. They get their name from the fact that I made up the recipe after trying a friend’s version.

Ingredients

  • 2 Habanero peppers
  • 2 Finger peppers
  • 3 Serrano peppers
  • 11 Jalapeno peppers
  • 6 lbs. tomatoes
  • 3 green bell peppers
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 2 Medium-Large onions
  • 6 cloves garlic
  • 1 T Rosemary
  • 1.5 t cayenne pepper
  • 2 t black pepper
  • salt to taste
  • 5 T olive oil

Directions

  1. Coat the peppers in the oil and char in the oven until the skins are blackened.
  2. Remove the skins from the tomatoes by immersing in boiling water for 30 seconds and then immersing in a cold water bath.
  3. Coarsely chop tomatoes and peppers.
  4. Add everything into a large pot and simmer until desired thickness is reached.
