Stuffed Red Potatoes with Carmelized Onions

Ingredients
- 12 small red potatoes
- 1.5 c yellow onions julienned
- 2 T olive oil
- 1 heaping T sour cream
- Salt and Pepper to Taste
Directions
- Place potatoes in large pot of salted water, bring to a boil and cook 25 min or until tender. Drain and cool completely.
- Cook onions in oil in saute pan over medium heat for 20 min or until carmelized.
- Cut potatoes in half, and scoop out guts with melon baller, leaving a strong wall
- Take potato guts and fold in sour cream, salt, pepper
- Fill potatoes and top with onions.
- Place in 350 F oven for 10 minutes to serve hot, May be served room temp.
