Stuffed Red Potatoes with Carmelized Onions

Ingredients

  • 12 small red potatoes
  • 1.5 c yellow onions julienned
  • 2 T olive oil
  • 1 heaping T sour cream
  • Salt and Pepper to Taste

Directions

  1. Place potatoes in large pot of salted water, bring to a boil and cook 25 min or until tender. Drain and cool completely.
  2. Cook onions in oil in saute pan over medium heat for 20 min or until carmelized.
  3. Cut potatoes in half, and scoop out guts with melon baller, leaving a strong wall
  4. Take potato guts and fold in sour cream, salt, pepper
  5. Fill potatoes and top with onions.
  6. Place in 350 F oven for 10 minutes to serve hot, May be served room temp.
