One-pot Creamy Mushroom Pasta

Ingredients

  • 2 T olive oil
  • 1 medium white onion, diced
  • 1 lb. baby bella mushrooms, sliced
  • 1 t salt
  • 0.5 t pepper
  • 0.5 c white wine
  • 2 T Worcestershire sauce
  • 4 c water
  • 8 oz. sour cream
  • 1 T tomato paste
  • 8 oz pappardelle pasta
  • 1 c frozen peas
  • 0.5 c Parmesan cheese

Directions

  1. Set dutch oven over medium-high heat. Add olive oil, onion, mushrooms, salt and pepper.
  2. Cook 10 minutes, stirring occasionally.
  3. Add white wine, Worcestershire sauce, water, sour cream, and tomato paste; bring to a simmer.
  4. Add pasta, submerging in liquid. Cook 7 minutes, uncovered. Stir often to prevent sticking.
  5. Add peas and cook 3 minutes longer. Stir in Parmesan cheese.
  6. Serve immediately.
