Important to note that Drumstick is a vegetable. That vegetable is NOT celery….

Ingredients
For Sambar Powder
- 2 t oil
 - 1 T coriander seeds
 - 1 T chana dal
 - 0.5 t cumin /jeera
 - 0.25 t methi / fenugreek seeds
 - 0.5 t pepper
 - 4 dried kashmiri red chili
 - few curry leaves
 - 2 T coconut, grated
 
For Hotel Sambar
- 1 c tamarind extract
 - 0.5 t tumeric
 - 1 t jaggery
 - 2 green chili, slit
 - few curry leaves
 - 0.5 onion, petals
 - 5 beans, chopped
 - 1 carrot, chopped
 - 2 drumsticks, chopped
 - 1 tomato, chopped
 - 1 t salt
 - 1 c water
 - 1.5 c toor dal, cooked
 - 2 T coriander, finely chopped
 
For Tempering
- 2 t oil
 - 1 t mustard /rai
 - 1 dried kashmiri red chili
 - few curry leaves
 
Directions
- Preheat oven to 350 F.
 - In a kadai take 1 cup tamarind extract, 0.5 tsp turmeric, 1 tsp jaggery, 2 green chilli and few curry leaves.
 - also, add vegetables and 1 tsp salt.
 - cover and boil for 10 minutes.
 - further, add 1 cup water and 1.5 cup toor dal.
 - now add 3 tbsp of prepared sambar powder and mix well.
 - boil for 2 minutes or till flavours of sambar powder is absorbed completely.
 - pour the tempering over sambar.
 - also, add 2 tbsp coriander leaves and mix well.
 - finally, hotel sambar is ready to serve along with hot steamed rice.
